Since 2013, Israeli immigration officers no longer stamp passports but instead issue cardsinstead. You should keep the card until you exit Israel. However, if you get to to the Middle East on a flight to Israel and go to the Syrian border from Jordan with a passport not showing how you entered the Middle East, they will simply refuse your passport.
At the Jordan crossings officials on both sides generally seem to not stamp your passport if you ask them to.
